Job responsibilities :Reports to the assistant warden. Directly supervises the assistant food service manager and offenders assigned to the food service department. Responsible for the management of food services, which includes the offender dining hall and special food services in compliance with Management & Training Corporation (MTC) and Texas Department of Criminal Justice (TDCJ) directives.

Essential functions:

  1. Ensures dining, service, and food preparation areas and equipment are maintained in a clean and sanitary manner; and ensures compliance with sanitation, safety, and health regulations.

  2. Provide staff training; evaluate staff performance and implement organizational and personnel changes as approved by the assistant warden and human resources.

  3. Inspects food for quantity, quality, and temperature; assures proper storage and use of inventory; and supervises the monitoring and logging of temperatures.

  4. Instructs employees and offenders on safety rules and regulations, proper use of soaps and chemicals including Material Safety Data Sheets (MSDS), sanitary procedures, food preparation and portion control, and the operation of food service equipment.

  5. Advises on food requirements and recipes; and calculates monthly, quarterly, semi-annual, and annual food requirements; prepares and approves requisitions for food items, supplies, and equipment.

  6. Prepares daily menus; ensures adequate controls are maintained over food preparation quantities and portion sizes; prepares menus for special diet requirements of offenders; and reviews cooks worksheets for accuracy.

  7. Oversees the department budget assuring the department operates efficiently and within budget; prepares budget reports and reconciles the budget monthly.

  8. Plans, assigns, and supervises the work of employees and offenders; reviews employee and offender work schedules for adequate coverage; establishes and administers orientation and departmental in servicetraining programs for food service staff and offenders.

  9. Perform security functions including pat and strip searches, by squatting and bending to perform such functions.

  10. Regular and predictable attendance is required.

It is expected that the incumbent shall perform other duties as assigned within his/her capabilities as determined by management.

Education and Experience Requirements:

Graduation from an accredited senior high school or equivalent or GED. Three (3) years full-time, wage earning experience in correctional, commercial, or institutional food service preparation or management. Thirty (30) semester hours from a college or university accredited by an organization recognized by the Council for Higher Education Accreditation (CHEA) or by the United States Department of Education (USDE) or equivalent technical trade school courses in the field of culinary, hotel, or restaurant management may be substituted for one (1) year of the required experience on a year-for-year basis for a maximum substitution of two (2) years. Two (2) years full-time, wage-earning experience in the supervision of employees. Two (2) years full-time, wage-earning correctional custody or law enforcement experience. Must have or be able to obtain current, valid ServSafe Food Safety Certification within twelve (12) months of employment date. A valid drivers license in the state of Texas with an acceptable driving record required, unless waived by management.
